Ingredients

  • 1 pound ground pork
  • 1 zucchini, shredded
  • 1 carrot, peeled and shredded
  • 1 cup Napa cabbage, shredded
  • 2 large eggs, lightly beaten
  • 2 cloves garlic, minced
  • 2 green onions, thinly sliced
  • 3 tablespoons reduced-sodium soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon ginger, freshly grated
  • 1 tablespoon mirin
  • 1 teaspoon sugar
  • kosher salt, to taste
  • black pepper, to taste
  • 40 wonton wrappers
  • 1/2 cup water, plus more, to taste, for sealing the wontons, divided
  • 2 tablespoons vegetable oil, plus more, to taste

Directions

Step 1 –Line an 18×26-inch baking sheet with parchment paper.

Step 2 –In a large bowl, combine the pork, the zucchini, the carrot, the cabbage, the eggs, the garlic, the green onions, the soy sauce, the sesame oil, the ginger, the mirin, the sugar, the salt, and the pepper.

Step 3 –Place the wonton wrappers on a flat work surface and spoon 1 tablespoon of the pork mixture onto the center of each.

Step 4 –Use your finger to rub the edges of the wontons with the water, fold the wrappers over the pork mixture to create a halfmoon shape, and pinch to seal.

Step 5 –Place the wrapped dumplings on the prepared baking sheet.

Step 6 –In a large skillet over medium heat, add the vegetable oil.

Step 7 –Cook the dumplings in the oil in batches, in a single layer, until the bottoms begin to brown, about 30 seconds.

Step 8 –Add 1/2 cup of the water to the dumplings, cover, and cook for 3 minutes.

Step 9 –Uncover the dumplings and cook until the liquid has evaporated and the bottoms are crisp and golden-brown, about 2 minutes.

Step 10 –Transfer the cooked dumplings to a large serving platter.

Step 11 –Serve immediately.
