Pansy’s Scalloped Potatoes

Ingredients

  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1 teaspoon salt
  • cayenne pepper, to taste
  • 1 1/2 cups sharp cheddar cheese, grated, divided
  • 4 cups Yukon Gold or russet potatoes, thinly sliced
  • paprika, to taste
  • chives, to taste, chopped, for garnish

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease a 1 1/2-quart baking dish.

Step 3 -In a small saucepan, melt the butter, then stir in the flour.

Step 4 -Slowly whisk the milk into the butter-flour mixture and season with the salt and the cayenne.

Step 5 -Cook the sauce on medium-low heat, whisking occasionally, until it is smooth and boiling.

Step 6 -Reduce the heat to low and stir 1 cup of the cheese into the sauce.

Step 7 -Place 1/2 of the sliced potatoes in the baking dish, then cover with 1/2 of the cheese sauce. Repeat the layers once.

Step 8 -Sprinkle the potatoes with the remaining cheese and the paprika.

Step 9 -Bake the scalloped potatoes until they are fork-tender, about 45-50 minutes.

Step 10 -Serve the scalloped potatoes garnished with the chives.
