Ingredients

For the sauce:

  • 1/2 cup peanut butter
  • 1 (15 ounce) can crushed tomato
  • 1 cup chicken stock
  • 1 tablespoon honey
  • 1 teaspoon ground cumin
  • 1 teaspoon coriander
  • pepper flakes, to taste

For the chicken:

  • 8 chicken thighs, boneless and skinless
  • 2 tablespoons soy sauce
  • 1 tablespoon oil, neutral-flavored
  • 1/2 medium onion, finely minced
  • 3 cloves garlic, finely minced
  • 1 tablespoon ginger, minced
  • sea salt, to taste
  • pepper, to taste
  • cilantro, optional, minced, to serve

Directions

Step 1 –Whisk together the peanut butter, crushed tomato, chicken stock, honey, cumin, coriander, and pepper flakes in a medium bowl.

Step 2 –Cut the chicken into small pieces and place them in a large bowl.

Step 3 –Add the soy sauce and mix.

Step 4 –Heat the oil in a large, non-stick pan over medium-high heat.

Step 5 –Carefully place the chicken and soy sauce in the pan. Move the chicken around into a single layer.

Step 6 –Allow the chicken to cook undisturbed for 5 minutes, then turn the chicken over.

Step 7 –Let it cook on the other side for 5 minutes. The chicken should be cooked through, reading 165 degrees F when tested with a meat thermometer.

Step 8 –Add the onion in with the chicken and allow it to cook until transparent, about 3 minutes.

Step 9 –Add in the garlic and ginger, cooking until fragrant, about 1 minute.

Step 10 –Pour the peanut butter sauce over the chicken and allow it to cook until it thickens.

Step 11 –Add salt and pepper to taste.

Step 12 –Serve with the minced cilantro!
