Pink Lady Skillet

Ingredients

  • 1 tablespoon olive oil
  • 6 small sweet Italian sausage links, about 1 1/2-pounds total
  • 2 Pink Lady apples, halved
  • 1/2 red onion, sliced
  • 1/2 head red cabbage, cut into 1/2-inch-thick slices
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 cup fresh apple cider
  • 2 tablespoons fresh cider vinegar

Directions

Step 1 –Heat the oil in a large cast-iron skillet over medium-high heat. Add the sausage and cook, turning occasionally until golden brown, about 6-8 minutes. Transfer to a plate.

Step 2 –Reduce the heat to medium and add in the apples, cut-side down.

Step 3 –Scatter the onions and the cabbage around the apples. Season with the salt and the pepper.

Step 4 –Cook, stirring the onions occasionally, until the apples are golden brown, about 3-4 minutes.

Step 5 –Flip the apples. Return the sausage to the skillet, nestling among the onions and cabbage. Add the cider and the vinegar.

Step 6 –Simmer, rotating and turning the sausages occasionally until the sausages are cooked through and tender, about 18-20 minutes.

Step 7 –Serve.
