Polish Sausage Skillet

Ingredients

  • 2 tablespoons butter, divided
  • 1/2 pound smoked Polish sausage or smoked kielbasa, cut into 1/2-inch slices
  • 1/2 large head cabbage, coarsely chopped
  • 1 medium onion, chopped
  • 2 (8-ounce) cans tomato sauce
  • 1/4 cup sugar
  • 1 tablespoon paprika
  • 2 large potatoes, peeled and cubed

Directions

Step 1 –In a large enameled cast-iron or other oven-proof skillet, melt 1 tablespoon of the butter.

Step 2 –Add the sausage and cook until browned, about 5 minutes.

Step 3 –Transfer the sausage to a plate.

Step 4 –Melt the remaining butter in the same skillet.

Step 5 –Add the cabbage and the onion and sauté until tender, about 5-7 minutes.

Step 6 –In a small bowl, combine the tomato sauce, the sugar, and the paprika.

Step 7 –Pour the sauce mixture over the cabbage mixture.

Step 8 –Bring the mixture to a boil, then reduce the heat to low.

Step 9 –Cover and simmer the mixture for 20 minutes.

Step 10 –Add the potatoes and the sausage, then cover again to simmer until the potatoes are tender, about 30 minutes.

Step 11 –Serve.
