Quick & Healthy Egg Muffins

Ingredients

  • 10 large eggs
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder, optional
  • 1 1/2 cup diced ham, or 8 slices cooked and crumbled bacon, or 1/2 pound cooked sausage
  • 1/2 red bell pepper, diced
  • 3 tablespoons white onion, minced
  • 1 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Generously spray a 12-cup muffin pan with nonstick cooking spray.

Step 3 –In a large bowl, add the eggs, the black pepper, the salt, and the garlic powder and whisk to combine.

Step 4 –Evenly divide the ham, the red bell pepper, the onion, the cheddar cheese, and the mozzarella cheese into each of the prepared muffin cups.

Step 5 –Evenly pour the egg mixture over the top of the cheese mixture.

Step 6 –Bake the egg muffins, uncovered, until the eggs are set, about 22-25 minutes.

Step 7 –Transfer the egg muffins to a large serving platter and serve immediately.
