Need a head start on your morning? Quick-Start Muffins will have you up and out of the house in no time! A fluffy egg scramble with crumbled pork sausage, chopped green chiles, and just the right touch of seasoning is baked up muffin-style to create a grab-and-go-type of breakfast everyone will love! Quick-Start Muffins could even be made ahead to make the morning go a little quicker and seem a little smoother. Time is of the essence, so try some today!

Ingredients

  • 1/2 pound ground pork sausage
  • 12 large eggs, beaten
  • 1 small onion, chopped
  • 1/2 (4-ounce) can chopped green chiles, drained
  • 1 teaspoon garlic powder
  • salt, to taste
  • black pepper, to taste

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Grease a 12-cup muffin pan.

Step 3 -In a large skillet over medium-high heat, add the ground pork sausage and cook, while crumbling, until it is no longer pink, about 5-7 minutes. Drain the excess grease.

Step 4 -In a large bowl, add the eggs, the onions, and the chiles and whisk to combine.

Step 5 -Add the cooked sausage, the garlic powder, the salt, and the black pepper to the egg mixture and stir until it is well-combined.

Step 6 -Add 1/4 cup of the egg mixture to each of the prepared muffin cups.

Step 7 -Bake the muffins until the eggs are set and a toothpick inserted into the center comes out clean, about 15-20 minutes.

Step 8 -Serve.
