Quinoa Chicken

The secret to making quinoa delicious is to cook it in something delicious so it can soak up all those flavors. Quinoa Chicken may only be one example of this truth, but it’s also certainly one of the tastiest! The mildly nutty and tender quinoa absorbs all of the succulent chicken flavor, enhancing the juicy, savory ground chicken that’s mixed right into it. Bright tomatoes, spicy chiles, and fragrant garlic add dimension and balance to that delicious chicken flavor. Mmmm, Quinoa Chicken might just replace your favorite rice dish!

Ingredients

  • 2 cups chicken broth
  • 1 cup quinoa
  • 2 teaspoons vegetable oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 1/2 pounds ground chicken
  • 1 1/2 (10-ounce) cans diced tomatoes with green chili peppers

Directions

Step 1 –In a large saucepan, combine the chicken broth and the quinoa and bring the mixture to a boil.

Step 2 –Reduce the heat to medium-low, cover the saucepan, and simmer the quinoa until it’s tender and the liquid has absorbed, about 15-20 minutes.

Step 3 –Heat the vegetable oil in a large skillet over medium-high heat.

Step 4 –Add the onion and the garlic to the skillet and sauté until the onion is translucent, about 5 minutes.

Step 5 –Add the ground chicken to the onion/garlic mixture and cook, stirring regularly, until the chicken is browned and crumbly, about 5-7 minutes.

Step 6 –Stir the cooked quinoa and the diced tomatoes with the green chili peppers into the chicken mixture and simmer until the flavors meld together, about 10 minutes.

Step 7 –Serve.
