Santorini Burgers

Santorini Burgers take the traditional turkey burger on an international trip to the sapphire waters of the Aegean Sea! The burger remains as juicy and savory as ever, now with plenty of Greek seasonings and sharp feta cheese. On top, Santorini Burgers pile on a bright and tangy tomato salad and a creamy, refreshing, and homemade tzatziki sauce for some extra Mediterranean flavor. There hasn’t been a turkey burger before or since that’s as luxurious, indulgent, and just plain sunny!

Ingredients

For the Greek tomato salad:

  • 1 cup cherry tomatoes, quartered
  • 1/4 cup red onion, diced
  • 2 tablespoons flat-leaf parsley, chopped
  • 2 teaspoons red wine vinegar
  • 1 teaspoon olive oil
  • kosher salt, to taste
  • fresh ground black pepper, to taste

For the tzatziki sauce:

  • 1 cup non-fat Greek yogurt, plain
  • 1/2 cup cucumber, shredded, with as much liquid removed as possible
  • 1/2 lemon, juiced
  • 1 tablespoon fresh dill, chopped
  • 1/8 teaspoon granulated garlic, plus more, to taste
  • kosher salt, to taste
  • fresh ground black pepper, to taste

For the turkey burgers:

  • 1 cup fresh baby spinach, chopped
  • 1/4 cup red onion, minced
  • 1/4 cup feta cheese, crumbled
  • 1 tablespoon fresh dill, chopped
  • 1 teaspoon dried oregano, rubbed between the palms of your hands
  • 1/4 teaspoon granulated garlic
  • 1/2 teaspoon kosher salt
  • fresh ground black pepper, to taste
  • 1 pound lean ground turkey or ground chicken
  • 4 (6-inch) pita bread rounds or sandwich thins

Directions

Step 1 -Combine the cherry tomatoes, 1/4 cup of the red onions, the flat-leaf parsley, the red wine vinegar, the olive oil, the salt, and the pepper in a bowl, stirring until combined.

Step 2 -Taste for seasoning, and add more of the salt, as needed.

Step 3 -Cover and refrigerate until ready to serve.

Step 4 -Place the Greek yogurt, the cucumber, the lemon juice, 1 tablespoon of the dill, 1/8 teaspoon of the granulated garlic, the salt, and the pepper in a bowl, stirring to combine.

Step 5 -Taste for seasoning, and add more of the salt and the pepper, as needed.

Step 6 -Cover and refrigerate until ready to serve.

Step 7 -In a large bowl, combine the spinach, the remaining red onions, the feta, the remaining dill, the oregano, the remaining granulated garlic, 1/2 teaspoon of the salt, and the black pepper.

Step 8 -Add the ground turkey and use your hands to mix, being careful not to overwork the meat.

Step 9 -Form the meat mixture gently into 4 patties. Place a small indent in the center of each patty to ensure they maintain their shape during cooking.

Step 10 -Preheat the grill to medium heat or preheat a grill pan or skillet over medium heat on the stove-top.

Step 11 -Spray the grill grates or the pan with cooking spray.

Step 12 -Add the burgers to the grill or pan and grill until cooked through at 165 degrees F, about 4-6 minutes per side.

Step 13 -Serve the burgers in the pitas and topped with the tzatziki sauce and the Greek tomato salad.
