Saturday Morning Sour Cream Cake

Ingredients

  • 1 1/2 cups flour, plus more, to taste, for dusting the pan
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 3 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sour cream
  • confectioners’ sugar, to taste, for serving

Directions

Step 1 –Preheat the oven to 325 degrees F.

Step 2 –Grease an 8×4-inch loaf pan and then, using the extra flour, lightly dust the greased pan.

Step 3 –In a medium bowl, add the remaining 1 1/2 cups of the flour, the baking powder, the baking soda, and the salt and whisk to combine.

Step 4 –In a large bowl of a stand mixer, add the butter and the granulated sugar and beat on medium speed until light and fluffy, about 10 minutes.

Step 5 –Add the eggs and the vanilla extract to the butter mixture and mix to combine, about 2 minutes.

Step 6 –Reduce the mixer speed to low.

Step 7 –Alternate adding the flour mixture and the sour cream to the butter mixture and mix until just combined after each addition.

Step 8 –Evenly pour the batter mixture into the prepared loaf pan.

Step 9 –Bake until a toothpick inserted into the middle of the cake comes out clean, about 55 minutes-1 hour 5 minutes.

Step 10 –Transfer the cake to a wire rack and let it cool, about 10 minutes.

Step 11 –Invert the cake onto the wire rack and let it cool completely.

Step 12 –Sprinkle the cake with the confectioners’ sugar, slice, and serve.
