Ingredients

  • olive oil, to taste
  • 1 (14.5-ounce) can diced tomatoes, undrained, divided
  • 6 (6-inch) flour tortillas, divided
  • 12 ounces lean ground beef
  • 1 small onion, chopped
  • 1 red or green sweet pepper, chopped
  • 1 teaspoon chili powder
  • 1/4 teaspoon ground cinnamon
  • 4 ounces cheddar cheese, shredded
  • fresh cilantro leaves, optional, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Brush a 9-inch pie plate with the olive oil.

Step 3 –Spread a large spoonful of the diced tomatoes onto the bottom of the prepared pie plate.

Step 4 –Arrange 4 of the tortillas on top of the tomatoes and up the sides of the plate, overlapping as necessary.

Step 5 –In a large skillet, cook the ground beef, the onion, and the sweet pepper over medium-high heat until browned; drain off the fat.

Step 6 –Add the chili powder and the cinnamon to the beef mixture and cook, while stirring, until fragrant, about 1 minute.

Step 7 –Stir 1/2 of the remaining tomatoes into the beef mixture and bring to boil.

Step 8 –Reduce the heat and cook the beef mixture, uncovered, until it thickens slightly, about 2 minutes.

Step 9 –Spoon the beef mixture over the tortilla layer in the pie plate.

Step 10 –Cut the remaining tortillas into large strips.

Step 11 –Layer the cheese and the tortilla strips over the beef mixture.

Step 12 –Top the tortillas with the remaining diced tomatoes.

Step 13 –Bake, uncovered, until the tortillas are lightly browned, about 20-25 minutes.

Step 14 –Let the pie stand for 5 minutes, then cut it into wedges.

Step 15 –Top the pie with the cilantro and serve.
