Seaside Salmon

A thick cut of salmon is dressed to the nines with a zesty dry rub and a refreshing splash of lemon-honey butter and baked until browned and tender. Then the hot and happening salmon joins the party with some mango salsa that will make your taste buds dance the night away. Ingredients

For the salmon:

  • 1 large (about 2 1/2-pound) fillet salmon
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1/8 teaspoon cayenne powder
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup butter, melted
  • 2 tablespoons honey
  • 1 lemon, freshly juiced

For the mango salsa:

  • 2 mangoes, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 tomato, chopped
  • 2 tablespoons cilantro, chopped
  • 1 jalapeƱo, finely chopped
  • salt, to taste
  • black pepper, to taste
  • lime juice, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line an 18×26-inch baking sheet with aluminum foil, coat the foil with nonstick cooking spray, and fold up the edges to create a pouch to keep the liquids from spilling over during baking.

Step 3 –Add the salmon to the middle of the prepared baking sheet, inside the pouch.

Step 4 –In a medium bowl, add the paprika, the chili powder, the cayenne powder, the garlic powder, the salt, and the black pepper and whisk to combine.

Step 5 –In a separate medium bowl, add the butter, the honey, and the lemon juice and whisk to combine.

Step 6 –Place the salmon, skin-side down, on a cutting board and evenly sprinkle with the dry rub mixture.

Step 7 –Evenly pour the butter mixture over the top of the seasoned salmon.

Step 8 –Let the salmon rest and come to room temperature before baking, about 15 minutes.

Step 9 –Bake the salmon until it reaches an internal temperature of 145 degrees F, about 15-20 minutes.

Step 10 –Change the oven to the broil setting and broil until the top of the salmon is browned, about 3-5 minutes.

Step 11 –Transfer the broiled salmon from the oven to a wire rack and let it rest, about 5 minutes.

Step 12 –In a large bowl, add the mangoes, the red bell pepper, the tomato, the cilantro, the jalapeƱo, the salt, the black pepper, and the lime juice and stir to combine.

Step 13 –Transfer the mango salsa to the refrigerator to marinate until ready to serve.

Step 14 –Cut the salmon into serving-size pieces and serve with the mango salsa.
