Sheet-Pan Pork & Veggie Dinner

The pork is tender and juicy, the potatoes are tender and fluffy, the broccoli is roasted to golden-brown while still retaining its sweet brightness. And everything is ready in 40 minutes! Ingredients

For the potatoes:

  • 1 pound baby gold or red potatoes, cut in half
  • 1 tablespoon olive oil, plus more to taste
  • salt, to taste
  • pepper, to taste
  • 2 teaspoons garlic powder

For the pork chops:

  • 4 pork chops, thick-cut and boneless
  • pepper, to taste
  • salt, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian herb seasoning blend
  • 1/2 teaspoon smoked paprika
  • 2 teaspoons dry ranch seasoning

For the broccoli:

  • 3 cups broccoli florets
  • 2 tablespoons olive oil
  • salt, to taste
  • pepper, to taste

For serving:

  • 1/3 cup parmesan cheese, grated

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Grease a baking sheet.

Step 3 –Toss the potatoes with the 1 tablespoon of the olive oil, the salt, the pepper, and 2 teaspoons of the garlic powder.

Step 4 –Arrange the potatoes on 1/3 of the baking sheet, making sure to brush the sheet pan with a little olive oil.

Step 5 –Bake the potatoes for 10 minutes.

Step 6 –While the potatoes are baking, generously season the pork with the pepper, the salt, the remaining garlic powder, the Italian blend, the paprika, and the ranch seasoning.

Step 7 –Add the pork chops to the pan with the potatoes, arranging them in the center third of the pan.

Step 8 –Bake for 10 minutes.

Step 9 –While the pork and potatoes bake, in a bowl, toss the broccoli with the remaining oil and season with the salt and the pepper.

Step 10 –Arrange the coated broccoli on the remaining third of the baking sheet.

Step 11 –Bake until the internal temperature of the pork reads 145 degrees F and the broccoli and potatoes are easily pierced with a fork, about 10-15 minutes.

Step 12 –Allow the pork to rest for 3-5 minutes.

Step 13 –Sprinkle with the cheese and serve.
