Ingredients

For the bars:

  • 1 tablespoon coconut oil, plus more for greasing
  • 2 cups old fashioned oats
  • 1 cup almonds, slivered
  • 4 tablespoons honey
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoons cinnamon
  • 2 bananas
  • 1 1/2 teaspoons vanilla
  • vanilla whey protein, to taste

For the topping:

  • 1/2 cup old fashioned oats
  • 1/4 cup almonds, slivered
  • 1/4 cup pumpkin seeds
  • 1 cup blueberries
  • 1/4 cup coconut or almond milk
  • 1/4 teaspoon cinnamon

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Prepare a square 9×9-inch baking pan with parchment paper and coconut oil.

Step 3 –Place the coconut oil, 2 cups of the oats, 1 cup of the almonds, the honey, the kosher salt, the cinnamon, the bananas, the vanilla, and the whey protein into a food processor, mixing until combined and wet.

Step 4 –Pour the mixture into the prepared baking pan and smooth it out with a spatula.

Step 5 –Place in the oven, and bake for 8-10 minutes.

Step 6 –Combine the remaining oats, the remaining almonds, the pumpkin seeds, the blueberries, the coconut milk, and the cinnamon into a bowl.

Step 7 –Spread the topping mixture over the pan, lightly pressing down.

Step 8 –Bake for another 15 minutes.

Step 9 –Allow the bars to cool.

Step 10 –Serve!
