Ingredients

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper, with more for optional garnish
  • 2 cups milk, not skim
  • 1 cup cheddar cheese, shredded
  • 5 cups potatoes, peeled and thinly sliced
  • 1/2 cup onion, chopped

Directions

Step 1 –Preheat your oven to 350 degrees F.

Step 2 –Grease a 2-quart, oven-safe dish.

Step 3 –Using a large pan over low heat on the stove-top, melt the butter.

Step 4 –Once the butter is melted, stir in the flour, the salt, and the pepper until the mixture is smooth and the raw flour smell disappears.

Step 5 –Then, gradually add in the milk and bring it to a boil.

Step 6 –Cook and stir the mixture for about 2 minutes, until it has thickened.

Step 7 –Remove the pan from the heat.

Step 8 –Stir in the cheddar cheese until it has completely melted.

Step 9 –Add in the potatoes and onion.

Step 10 –Pour the mixture into the prepared dish.

Step 11 –Cover the dish and bake the potatoes for approximately 1 hour.

Step 12 –Then, uncover and continue baking until the potatoes are fork-tender, about 30-40 minutes.

Step 13 –Remove from the oven and garnish with more pepper.

Step 14 –Serve hot.
