Ingredients
- 1 pound ground beef
- 1 medium white onion, chopped
- 2 (15-ounce) cans Ranch Style® beans
- 1 (9.3-ounce) package corn chips, divided
- 2 (10-ounce) cans enchilada sauce
- 2 cups cheddar cheese, shredded
- green onions, to taste, thinly sliced, for garnish
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch baking dish.
Step 3 –In a large skillet over medium-high heat, add the beef and the white onion and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.
Step 4 –Reduce the heat to medium. Add the beans to the beef mixture and cook, stirring frequently, until they are heated through.
Step 5 –Reserve 1 cup of the corn chips.
Step 6 –Add the remaining corn chips to the bottom of the prepared baking dish.
Step 7 –Pour the beef mixture over the corn chip layer.
Step 8 –Pour the enchilada sauce over the beef layer and sprinkle with the cheese and the reserved 1 cup of corn chips.
Step 9 –Bake the pie until the cheese has melted, about 15-20 minutes.
Step 10 –Serve the pie garnished with the green onions.
