Slow Cooker Carnitas

Slow Cooker Carnitas is the recipe for the taco night of your dreams! Combine all the ingredients in a slow cooker and you’ll come home from work to the delicious, spicy smells of a Mexican restaurant. Top your tortillas with the tender, seasoned pork, and add your favorite veggies for a refreshing crunch! Slow Cooker Carnitas will become a staple for Taco Tuesday, or any night when you’re in the mood for some robust Mexican flavors!

Ingredients

For the pork:

  • 1 1/2-2 pounds pork tenderloins
  • 1 medium onion, sliced
  • 1 jalapeƱo pepper, seeded and sliced
  • 4 slices orange rind, optional
  • 1 (12-ounce) cans cola soda
  • salt, to taste
  • pepper, to taste
  • 16 taco-sized flour or corn tortillas

Optional, for serving:

  • avocado, to taste, chopped
  • onions, to taste, chopped
  • jalapeƱos, to taste, sliced
  • fresh cilantro, to taste, chopped
  • cabbage, to taste, shredded
  • lime juice, to taste

Directions

Step 1 –Combine the pork, 1 of the sliced onions, 1 of the sliced jalapeƱos, the orange peel, the soda, the salt, and the pepper in a slow cooker.

Step 2 –Cover and cook on low for 8 hours.

Step 3 –Uncover and shred the meat using two forks.

Step 4 –Serve on the flour tortillas and top with your desired toppings.
