Ingredients
- 2 pounds chicken breasts, boneless and skinless
- 1 cup yellow onion, diced
- 1 cup celery, chopped
- 3/4 cup carrots, shredded
- 2 cloves garlic, minced
- 1 teaspoon ground thyme
- 1/4 teaspoon ground nutmeg
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 4 cups chicken broth
- 1 (16-ounce) package potato gnocchi
- 2 cups heavy cream
- 1 tablespoon cornstarch
- 1 cup spinach, chopped
- 1 tablespoon fresh parsley, optional, finely chopped, for garnish
Directions
Step 1 –In the bowl of a slow cooker, add the chicken, the onion, the celery, the carrots, the garlic, the thyme, the nutmeg, the salt, and the pepper.
Step 2 –Pour the broth into the chicken mixture and cover the slow cooker. Cook the soup for about 3-4 hours on high heat or 6 hours on low heat.
Step 3 –Transfer the chicken breasts to a plate and shred them.
Step 4 –Add the shredded chicken and the gnocchi to the soup.
Step 5 –In a small bowl, whisk the heavy cream and the cornstarch together.
Step 6 –Pour the heavy cream mixture into the soup and stir well.
Step 7 –Set the slow cooker to high heat and cook the soup, about 20-30 minutes.
Step 8 –Stir the spinach into the soup until it wilts.
Step 9 –Serve the soup garnished with the parsley.
