So Good Skillet

We didn’t call it So Good Skillet for no reason! It is truly SO good. This satisfying pasta dish is loaded with tangy tomato flavor and savory, hearty beef. The melted cheese is just added delight for your tastebuds. When your people try it, they’ll exclaim, “this is so good!” in unison. Yep, that’s right. So Good Skillet is the one-pot, thirty-minute-meal you must have on your weekly rotation! In fact, it’s so good you might just crave it daily!

Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 pounds ground beef
  • 1 onion, diced
  • kosher salt, to taste
  • pepper, to taste
  • 1 (28-ounce) can diced tomatoes, undrained
  • 1 (8-ounce) can tomato sauce
  • 2 cups chicken broth
  • 1/4 cup ketchup
  • 1 tablespoon Dijon mustard
  • 1 pound rotini pasta
  • 2 cups water
  • 2 cups cheddar cheese, shredded
  • 1 Roma tomato, diced
  • 2 green onions, sliced

Directions

Step 1 –In a large stockpot or Dutch oven over medium heat, warm the olive oil.

Step 2 –Add the beef, the onion, the salt, and the pepper and cook, while crumbling the beef, until the meat is no longer pink, about 5-7 minutes. Drain the excess fat.

Step 3 –Stir the diced tomatoes, the tomato sauce, the chicken broth, the ketchup, the mustard, the pasta, and the water to the beef mixture and bring to a boil.

Step 4 –Cover the stockpot, lower the temperature of the stovetop, and simmer until the pasta is cooked to al dente, about 15 minutes.

Step 5 –Transfer the pasta mixture from the stovetop and top with the shredded cheese. Cover the stockpot until the cheese has melted, about 2 minutes.

Step 6 –Garnish with the Roma tomatoes and the green onions and serve.
