Ingredients

  • 2 pounds sweet potatoes, scrubbed, peeled, and sliced into 1/2-inch rounds.
  • 3/4 cup dark brown sugar
  • 1 cup white sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 2 tablespoons vanilla extract
  • 1 stick butter
  • 4 tablespoons frozen orange juice concentrate, thawed

Directions

Step 1 –In a medium pot over medium-high heat on the stove-top, combine the sweet potatoes with the brown sugar, white sugar, cinnamon, nutmeg, ginger, salt, vanilla, butter, and frozen orange juice.

Step 2 –Stir the sweet potatoes until coated in the butter and sugar mixture fully.

Step 3 –Let the mixture come to a boil.

Step 4 –Cover and then let the sweet potatoes simmer until the yams are tender, about 50 minutes.

Step 5 –Remove the lid and set the stove-top heat to medium.

Step 6 –Let the mixture come to a boil.

Step 7 –Stir occasionally for 10 minutes or until the mixture reduces and the syrup coats the yams.

Step 8 –Remove the pot containing the candied yams from the stove and serve.
