Spill-The-Beans Soup

We’ve tried to keep this a secret for a long time, but we just can’t hold it in any longer. So, here we go… here’s Spill-The-Beans Soup! Known in our family for its savoriness and its absurd amount of beans, it’s one of the recipes we consider a classic. The one catch is that you have to plan a little, because you have to let the bean-y goodness soak for a few hours in the slow cooker. But believe us, it’s worth the wait and literally so easy! Phew, it feels good to finally get that off our chest. It’s no secret no more just how delicious Spill-The-Beans Soup is!

Ingredients

  • 1 (20-ounce) package Hurst’sĀ® HamBeensĀ® Cajun 15 Bean SoupĀ®, plus the seasoning packet
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 carrots, peeled and diced
  • 3 stalks celery, diced
  • 4 cloves garlic, minced
  • 6 cups reduced-sodium chicken stock or chicken broth
  • 2 cups ham, cooked and chopped
  • 1 teaspoon dried thyme
  • 2 dried bay leaves
  • 2 tablespoons soy sauce
  • 1 (14.5-ounce) can diced tomatoes

Directions

Step 1 –In a slow cooker, add all of the ingredients and stir until they are well-combined.

Step 2 –Cover the slow cooker and cook until the beans are soft, about 5-6 hours on high heat or about 8-10 hours on low heat.

Step 3 –Remove and discard the bay leaves.

Step 4 –Serve.
