As luck would have it, St. Paddy’s Day Boxty is a simple yet absolutely delicious way to serve your favorites… potatoes! All it takes are some coarsely grated potatoes with a little bit of cream and in no time, you can enjoy a fried potato pancake that is a complement to your morning meal. Even if you never find a four-leaf clover, St. Paddy’s Day Boxty is one thing you will always be thankful for! That’s one lucky spud!
Ingredients
- 1 egg
- 1/4 cup light cream or half-and-half
- 9 ounces baking or russet potatoes, peeled and coarsely grated
- 2 tablespoons all-purpose flour
- salt, to taste
- pepper, to taste
- 2 tablespoons butter
Directions
Step 1 –In a bowl, add the egg with the light cream and whisk to combine.
Step 2 –Add the potatoes, the flour, the salt, and the pepper to the egg-cream mixture and stir to mix. It will be slightly runny.
Step 3 –In a frying pan over medium heat, melt the butter.
Step 4 –Add the potato mixture to the melted butter and cook, flipping as needed, until the surface is golden-brown and the potato is cooked through, 8-10 minutes on each side.
Step 5 –Cut the boxty into wedges and serve.
