Stacked Mexican Casserole

Nothing sounds better than a literal stack of your favorite food… for real. Take Stacked Mexican Casserole for example. It starts with a soft tortilla shell that’s piled high with juicy beef, spicy sausage, tender veggies, and melty cheese. Imagine all of that stacked up on your plate. Sounds pretty delicious, huh? Ingredients

For the casserole:

  • 8 ounces lean ground beef
  • 7 ounces chorizo sausage, uncooked
  • 1 (15-ounce) can pinto beans, rinsed and drained
  • 1 tablespoon extra-virgin olive oil
  • 1 small yellow onion, chopped
  • 1 large yellow sweet pepper, chopped
  • 2 cloves garlic, minced
  • 2 ears fresh corn on the cob, kernels cut off cob
  • 3/4 cup bottled chunky green salsa
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper
  • 4 (8-9-inch) flour tortillas
  • 1 1/2 cups cheddar or Monterey Jack cheese, shredded, divided into thirds

Optional toppings:

  • sour cream, to taste
  • tomatoes, to taste, chopped
  • cilantro, to taste, chopped

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a 9-inch springform pan or a 12-inch pizza pan.

Step 3 –In a large skillet over medium heat, cook the beef and the chorizo, while crumbling, until they are no longer pink, about 6-8 minutes. Drain the excess grease.

Step 4 –Add the beans to the meat mixture and cook until they are heated through.

Step 5 –Transfer the meat mixture from the heat and cover to keep warm.

Step 6 –In another large skillet, heat the olive oil over medium heat.

Step 7 –Add the onion, the sweet pepper, and the garlic to the oil and cook, stirring occasionally, until they are tender, about 10 minutes.

Step 8 –Add the corn, the salsa, the chili powder, the cumin, and the cayenne pepper to the veggie mixture and cook, stirring occasionally, for 5 minutes.

Step 9 –Place 2 of the tortillas in the prepared pan and top with the meat mixture.

Step 10 –Sprinkle 1/3 of the cheese on the meat mixture and top with 1 of the tortillas, the vegetable mixture, and another 1/3 of the cheese.

Step 11 –Top the cheese with the remaining tortilla and cover the dish loosely with foil.

Step 12 –Bake the casserole for 10 minutes.

Step 13 –Carefully uncover the pan and sprinkle with the remaining 1/3 of the cheese.

Step 14 –Bake the casserole until the cheese has melted, about 10 minutes.

Step 15 –Top the casserole with the sour cream, the tomatoes, and the cilantro.

Step 16 –Slice with a serrated knife and serve.
