Ingredients
- 4 chicken thighs
- 1 tablespoons olive oil
- salt, to taste
- black pepper, to taste
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 2 tablespoons white vinegar
- 1 teaspoon ground ginger
- 4 cloves garlic, minced
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –On a large platter, add the chicken thighs and coat them with the olive oil.
Step 3 –Season the coated chicken thighs with the salt and the black pepper on both sides.
Step 4 –Place the chicken in a cast-iron or oven-proof skillet and transfer the skillet to the oven.
Step 5 –Roast the chicken without turning or moving it until the skin is lightly browned, about 3-5 minutes.
Step 6 –While the chicken is roasting, in a medium bowl, add the soy sauce, the brown sugar, the white vinegar, the ground ginger, and the garlic and stir to combine.
Step 7 –Transfer the chicken thighs from the skillet to a large plate and drain any drippings from the skillet.
Step 8 –Transfer the chicken thighs back to the drained skillet, skin-side up.
Step 9 –Pour the soy sauce mixture over the chicken thighs.
Step 10 –Transfer the chicken back to the oven and roast, basting occasionally, until the sauce has reduced and thickened and the chicken thighs are cooked through, reading 165 degrees F when tested with a meat thermometer in its thickest part, about 25 minutes.
Step 11 –Plate and serve.
