Ingredients
- 1 tablespoon olive oil
- 8 chicken thighs, bone-in, skin-on
- salt, to taste
- pepper, to taste
- 3/4 cup ketchup
- 1/3 cup soy sauce
- 1/3 cup honey
- 3 tablespoons garlic, minced
- 1/2 teaspoon onion powder
- 1/4 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/4 teaspoon dried mustard
- 2 tablespoons parsley, optional, chopped
Directions
Step 1 –In a cast-iron skillet over medium heat on the stove-top, heat the olive oil.
Step 2 –Season the chicken thighs with salt and pepper.
Step 3 –Sear the chicken in the skillet, skin side down, until golden.
Step 4 –Transfer the chicken from the skillet to the slow cooker, skin side up.
Step 5 –In a medium-sized bowl, combine the ketchup, soy sauce, honey, garlic, onion powder, dried thyme, dried parsley, and dried mustard.
Step 6 –Once combined, pour the mixture over the chicken in the slow cooker.
Step 7 –Place the lid on the slow cooker and cook on high until the chicken is cooked through and the sauce has thickened, for about 3 hours.
Step 8 –Plate the chicken, pour some of the sauce on top, garnish with parsley, and serve!
