Summer-Fresh Salad

And that’s what this Summer-Fresh Salad is here to celebrate! Gather your favorites from the garden, like fresh green beans, smooth yellow wax beans, juicy corn, and crispy radishes, then mix them with a creamy dressing for a summer dream in a dish! It’s the perfect excuse to spend time in your garden or at your local farmer’s market, and who doesn’t like being at either of those places?! It’s just pure warm weather bliss. And that’s pretty much Summer-Fresh Salad for ya! Commemorate this lovely, carefree season with a bite!

Ingredients

  • 8 ounces green beans
  • 8 ounces yellow wax beans
  • 2 ears fresh corn
  • 1/4 cup crème fraiche, room temperature
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 6 small radishes, thinly sliced
  • 1/2 cup fresh cilantro leaves, chopped
  • 1 tablespoon olive oil

Directions

Step 1 –In a large pot of boiling water, cook the green beans, the yellow wax beans, and the corn, in batches, until they are just tender, about 3 minutes.

Step 2 –Transfer the bean mixture to a bowl of ice water to cool.

Step 3 –Drain the water from the bean mixture and pat it dry.

Step 4 –Cut the corn off of the cob.

Step 5 –In a large bowl, whisk the crème fraiche, the cumin, the salt, and the pepper together.

Step 6 –Add the green beans, the yellow wax beans, the corn, and the radishes to the dressing.

Step 7 –Fold the cilantro into the salad and drizzle with the olive oil.

Step 8 –Serve.
