Super Sweet Potato Oatmeal

Super Sweet Potato Oatmeal has a name that really works on two levels. Firstly, it is quite the sweet side! The natural caramel-like flavor of the sweet potatoes is enhanced with the addition of floral honey, fragrant vanilla, rich butter, and warm spices. A little almond milk adds a touch of creaminess… mmm, it’s hard to believe this isn’t a dessert! But also, the name Super Sweet Potato Oatmeal describes just how delicious it tastes; super delicious, that is! This is a morning favorite you’ll find yourself making throughout the year!

Ingredients

  • 1 3/4 cups unsweetened almond milk
  • salt, to taste
  • 1 cup old-fashioned oats
  • 1/2 cup sweet potatoes, cooked and mashed
  • 2 tablespoons ground flax seed
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1 tablespoon honey
  • 1/2 tablespoon butter
  • 1 teaspoon vanilla extract

Directions

Step 1 –In a large saucepan over medium-high heat, add the almond milk and the salt and bring the mixture to a boil.

Step 2 –Reduce the heat to medium.

Step 3 –Add the oats, the mashed sweet potatoes, the flax seeds, the cinnamon, the ginger, and the cloves and cook, while stirring often, until the flavors meld together and everything is heated through, about 5 minutes.

Step 4 –Transfer the pan away from the heat.

Step 5 –Add in the honey, the butter, and the vanilla extract and stir to combine.

Step 6 –Serve.
