Sweet Oven-Fried Chicken

Sweet Oven-Fried Chicken is proof of the concept that chicken is the perfect platform to marry sweet and salty flavors! The tender, juicy meat is encrusted in an extra crunchy cereal breading with lots of fragrant basil packed in for a touch of sweetness and then baked to perfection. Topping it off with honey is the cherry on top to make sure each little crumb of Sweet Oven-Fried Chicken just dances off the plate. A magical marriage of taste is heading straight to your plate!

Ingredients

  • 1 egg, beaten
  • 2 tablespoons milk
  • 1 cup honey-toasted whole-grain puff cereal, crushed
  • 1 cup cornflakes, crushed
  • 1/4 cup fresh basil, snipped
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 4 chicken breast halves, boneless and skinless
  • honey, to taste, for serving
  • fresh herbs, optional, of your choice, to taste, chopped, for garnish

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a 15×10-inch baking pan.

Step 3 –In a shallow dish combine the egg and the milk.

Step 4 –In a second shallow dish, combine the crushed whole-grain cereal, the crushed cornflakes, the basil, the salt, and the pepper.

Step 5 –Dip the chicken pieces, one at a time, into the egg mixture.

Step 6 –Dip the egg-coated chicken into the cereal mixture, turning it to coat.

Step 7 –Place the coated chicken on the prepared baking pan.

Step 8 –Repeat the coating process with the remaining chicken, making sure the chicken pieces are not touching each other in the baking pan.

Step 9 –Sprinkle the remaining cereal mixture over the chicken.

Step 10 –Bake until the chicken reaches an internal temperature of 165 degrees F, about 22-25 minutes.

Step 11 –Serve with the honey and garnish with the fresh herbs.
