Sweet Potato Bites

There’s a lot to celebrate when the weather turns cold. What do celebrations and chilly weather have in common? Good food, of course! Sweet Potato Bites are bite-size, so they take the ease of your favorite party snacks and combine that with your favorite flavors of the fall: tender sweet potatoes, toasty marshmallows, and a little salty pecan on top! The perfect treat to eat when there’s no heat! (Well, hopefully, you have heat. Just not outside.) Get the delicious festivities going with some Sweet Potato Bites!

Ingredients

  • 4 medium sweet potatoes, peeled and sliced into 1/4-inch-thick rounds
  • 2 tablespoons butter, melted
  • 1 teaspoon maple syrup
  • kosher salt, to taste
  • 1 (10-ounce) bag marshmallows
  • 1/2 cup pecan halves

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –On a large baking sheet, toss the sweet potatoes with the butter and the maple syrup.

Step 3 –Arrange the coated sweet potatoes in an even layer.

Step 4 –Season the sweet potatoes with the salt.

Step 5 –Bake until tender, flipping halfway through, about 20 minutes.

Step 6 –Transfer the baking sheet from the oven and switch the oven to broil.

Step 7 –Top each of the sweet potatoes with a marshmallow.

Step 8 –Broil until the marshmallows are puffed and golden, about 1-2 minutes.

Step 9 –Immediately top each marshmallow with a pecan.

Step 10 –Serve.
