Switch-Up Spaghetti Bake

Ingredients

  • 1 tablespoon butter
  • 2/3 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) jar Alfredo sauce
  • 1 (8-ounce) package processed cheese product, such as Velveeta®, cubed
  • 2 (15.5-ounce) cans fire-roasted diced tomatoes, drained
  • 1 (16-ounce) package spaghetti, cooked according to the package directions
  • 3 cups chicken, cooked and shredded
  • 1/2 cup green onions, chopped, plus more, to taste, for garnish
  • 1 teaspoon dried Italian seasoning
  • 1 1/2 cups cheddar cheese, shredded

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a 3-quart baking dish with cooking spray.

Step 3 –In a large skillet, melt the butter over medium heat.

Step 4 –Add the onion and the garlic and cook, stirring frequently, until the onion is tender, about 7 minutes.

Step 5 –Stir in the Alfredo sauce and the processed cheese product until melted and smooth.

Step 6 –Stir in the fire-roasted tomatoes, the cooked spaghetti, the shredded chicken, 1/2 cup of the green onions, and the Italian seasoning until well-combined.

Step 7 –Spoon the mixture into the prepared pan.

Step 8 –Sprinkle the cheddar cheese on top of the bake.

Step 9 –Bake until hot and bubbly, about 20-30 minutes.
