Ingredients

  • 2 teaspoons olive oil
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • salt, to taste
  • 1 (14-ounce) can petite diced tomatoes, drained
  • 24 wonton wrappers
  • 1 1/4 cups cheddar cheese, shredded
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh tomatoes, diced

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Coat a 12 cup muffin tin with cooking spray.

Step 3 –Heat the olive oil in a large pan over medium-high heat.

Step 4 –Add the beef and use a spatula to break it up, stirring constantly.

Step 5 –Add the taco seasoning and salt.

Step 6 –Cook until the ground beef is cooked through, about 6-8 minutes.

Step 7 –Stir in the canned tomatoes.

Step 8 –Place a wonton wrapper into each prepared muffin tin.

Step 9 –Spoon about 1 tablespoon of the meat mixture into each wonton.

Step 10 –Top each wonton with 2 teaspoons of cheese.

Step 11 –Place a second wonton on top of the cheese.

Step 12 –Distribute the remaining meat and cheese across all the muffin cups.

Step 13 –Bake until the cheese is melted and the edges are browned, for about 10-15 minutes.

Step 14 –Top each taco cup with a dollop of sour cream along with the green onions and fresh tomatoes.

Step 15 –Serve.
