Taco Tuesday Casserole

Woo! It’s Tuesday! That’s normally not a day that gets a celebration, but Tuesday brings with it Taco Tuesday, and that means Taco Tuesday Casserole! A bubbly, cheesy, glorious bake that tastes like it’s the filling to the taco of your dreams, with plenty of browned beef, spicy salsa, tender rice, and bright juicy tomatoes. Mmmm you don’t need tortilla chips to enjoy Taco Tuesday Casserole… but they are certainly welcome!

Ingredients

  • 1 pound extra-lean ground beef
  • 1 cup plus 1/2 cup Mexican cheese blend, shredded and divided
  • 1 (1-ounce) package taco seasoning mix
  • 1 cup long-grain white rice, uncooked
  • 1 cup frozen mixed vegetables
  • 1 (14.5-ounce) no-salt-added diced tomatoes, undrained
  • 1 cup medium salsa, preferably chunky
  • 1 cup fat-free reduced sodium chicken broth

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Spray a 9×13-inch baking dish with cooking spray.

Step 3 –In a large, non-stick skillet over medium-high heat, add the beef and cook until brown, about 6-8 minutes.

Step 4 –Drain the fat from the skillet.

Step 5 –Add 1/2 cup of the cheese, the taco seasoning, the rice, the mixed vegetables, the tomatoes, the salsa, and the chicken broth to the beef, mixing well.

Step 6 –Spoon the mixture into the prepared baking dish.

Step 7 –Cover the baking dish and bake until the rice is tender, about 40-50 minutes.

Step 8 –Top the casserole with 1 cup of the cheese and bake, uncovered, until the cheese is melted, about 5 minutes.

Step 9 –Serve.
