Ingredients

For the filling:

  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 1/4 cup butter, cubed
  • 2 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • 1 (10-ounce) package frozen green peas
  • 4 cups chicken, cooked, cubed

For the dumplings:

  • 2 cups biscuit/baking mix
  • 2 teaspoons dried basil
  • 2/3 cup 2% milk

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –In a large saucepan over medium-high heat, melt the butter.

Step 4 –Add the onion and the celery to the butter and sauté until they are tender, about 3-5 minutes.

Step 5 –Add the garlic to the veggie mixture and cook until it is fragrant, about 1 minute.

Step 6 –Stir the flour, the sugar, the salt, the basil, and the black pepper into the veggie mixture.

Step 7 –Gradually add the chicken broth to the veggie mixture, bring it to a boil, and cook until it thickens, about 1 minute.

Step 8 –Reduce the heat, add the peas to veggie mixture, and cook, while stirring constantly, about 5 minutes.

Step 9 –Stir the chicken into the veggie mixture and cook until it is heated through, about 3-5 minutes.

Step 10 –Transfer the chicken mixture to the prepared baking dish.

Step 11 –In a small bowl, combine the baking mix and the basil.

Step 12 –Add the milk to the basil mixture and stir with a fork until it is moistened.

Step 13 –Drop the dumplings by the tablespoonfuls over the top of the chicken mixture.

Step 14 –Bake the casserole, uncovered, for 30 minutes.

Step 15 –Cover the casserole with aluminum foil and bake until a toothpick inserted into the thickest part of a dumpling comes out clean, about 10 minutes.

Step 16 –Transfer the casserole to a wire rack to cool.

Step 17 –Serve.
