Tequila Lime Grilled Chicken

When the temperatures are warmer and the days are longer, Tequila Lime Grilled Chicken is what you’ll be craving! The juicy grilled chicken encompasses the flavors of summer thanks to its sweet and spicy Tex-Mex-inspired marinade. Put Tequila Lime Grilled Chicken on a big, fresh salad or serve it with some colorful grilled veggies, and every meal will taste like a summertime barbecue!

Ingredients

  • 3 tablespoons olive oil
  • 3 tablespoons tequila
  • 1 tablespoon lime zest
  • 4 cloves garlic, minced
  • 1 1/4 teaspoons ground ancho chili pepper
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon dried oregano
  • 1 1/4 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 2 teaspoons honey
  • 4 chicken breasts, boneless, skinless, and pounded to 1/2-inch thickness
  • 1 lime, optional, sliced into wedges, for serving

Directions

Step 1 –Combine the olive oil, tequila, lime zest, garlic, ancho chili pepper, coriander, oregano, salt, pepper, and honey in a 1-gallon freezer bag.

Step 2 –Close the bag and squish the marinade around to mix.

Step 3 –Add the chicken breasts to the freezer bag and massage the marinade into the meat until it is evenly coated.

Step 4 –Seal the bag and place it in a bowl in the refrigerator to marinate for at least 6 hours and up to overnight.

Step 5 –Preheat the grill to high.

Step 6 –Spray the grates with a non-flammable cooking spray.

Step 7 –Place the chicken breasts on the grill and spoon any remaining marinade from the bag over the top of the meat.

Step 8 –Grill, covered, until the internal temperature of the chicken has reached 165 degrees F, about 2-3 minutes per side, and only flipping once.

Step 9 –Serve immediately with a lime wedge.
