Teriyaki Chicken & Rice Bowl

Ingredients

For the teriyaki sauce:

  • 1/2 tablespoon cornstarch
  • 1/4 cup soy sauce
  • 2 tablespoons sweet rice wine
  • 1 tablespoon honey
  • 4 tablespoons brown sugar
  • 1 garlic clove, minced
  • 1/4 teaspoon ginger paste or ground ginger powder

For the bowls:

  • 8 ounces broccoli florets
  • 2 carrots, peeled and chopped
  • soy sauce, to taste
  • rice wine, to taste
  • 1 teaspoon sesame oil
  • 1 tablespoon extra virgin olive oil
  • 1 pound chicken breast, diced
  • 2 cups white rice, cooked
  • sesame seeds, optional, to taste, for garnish
  • fresh sliced chives, optional for garnish

Directions

Step 1 –Mix together the cornstarch and 1 tablespoon of water in a small bowl, then set aside.

Step 2 –Whisk together the soy sauce, rice wine, honey, brown sugar, minced garlic, ginger and 2 tablespoons of water in a separate small pot until well combined.

Step 3 –Bring the soy sauce mixture to a boil on medium heat over the stove-top, then reduce the heat to a simmer.

Step 4 –Whisk in the cornstarch-water mixture and cook until thickened, about 1-2 minutes.

Step 5 –Set the teriyaki sauce aside and keep warm.

Step 6 –In a steamer set, steam the broccoli and the carrots over boiling water until they are tender, for 4-5 minutes.

Step 7 –Toss the vegetables with soy sauce and rice wine.

Step 8 –Set the vegetables aside and keep warm.

Step 9 –Heat 1 teaspoon of sesame oil and 1 tablespoon of olive oil over medium-high heat in a large skillet.

Step 10 –Add the diced chicken, sauteing until it is golden and cooked through, about 5 minutes.

Step 11 –Pour half of the teriyaki sauce over the chicken, cooking it for one more minute.

Step 12 –To assemble the bowl, add equal amounts of rice to each.

Step 13 –Top the rice with the broccoli, carrots, and chicken.

Step 14 –Drizzle the bowls with the remaining teriyaki sauce, sesame seeds, and chives.

Step 15 –Serve!
