The Thai Cobb Salad brings the same speed and convenience with a distinctly Asian influence: bands of hearty hard-boiled eggs, savory chicken, and crisp fresh veggies create a rainbow over a bed of verdant lettuce. Poured overtop is a nutty, creamy, and rich peanut butter sauce dressing that evokes the best your favorite Thai restaurant has to offer. Thai Cobb Salad is easy to make and even easier to enjoy, making the salad course the best part of the meal!

Ingredients

  • 1 bunch romaine, torn
  • 2 cups rotisserie chicken, shredded
  • 3 large eggs, hard-boiled and coarsely chopped
  • 1 medium ripe avocado, peeled and thinly sliced
  • 1 medium carrot, shredded
  • 1 medium sweet red pepper, julienned
  • 1 cup fresh snow peas, halved
  • 1/2 cup unsalted peanuts
  • 1/4 cup fresh cilantro leaves
  • 3/4 cup Asian toasted sesame salad dressing
  • 2 tablespoons creamy peanut butter

Directions

Step 1 –On a large serving platter, place the romaine.

Step 2 –Arrange the chicken, eggs, avocado, carrot, red pepper, snow peas, and peanuts over the romaine.

Step 3 –Sprinkle the salad with cilantro.

Step 4 –In a small bowl, whisk the salad dressing and the peanut butter together until smooth.

Step 5 –Serve the salad with the dressing.
