Ingredients
- 1 (16-ounce) package linguine
- 6 cloves garlic, minced
- 1 (7-ounce) jar sun-dried tomatoes in oil, drained with 2 tablespoons of the oil reserved, tomatoes julienned
- 1 tablespoon lemon juice
- 1/2 cup fresh parsley, minced, plus more, whole leaves, to taste, for garnish
- 1 1/2 cups feta cheese, crumbled
- 1 1/2 cups parmesan cheese, grated
Directions
Step 1 –In a large pot of salted, boiling water, cook the linguine to al dente, according to the package directions.
Step 2 –Reserve 1/2 cup of the pasta water, then drain the pasta.
Step 3 –Transfer the linguine back to the pot.
Step 4 –In a small microwave-safe bowl with the microwave on high, add the garlic and the reserved sun-dried tomato oil and microwave until warm and fragrant, about 45 seconds.
Step 5 –Add the julienned sun-dried tomatoes and the lemon juice to the garlic-oil and stir to combine.
Step 6 –Add the sun-dried tomato mixture to the cooked linguine and stir to combine.
Step 7 –Add 1/2 cup of the minced parsley, the feta cheese, and the parmesan cheese to the linguine. Add as much of the reserved pasta water as needed to thin the sauce to your desired consistency and stir to combine; you may not use all of the pasta water.
Step 8 –Garnish with the extra parsley leaves and serve.
