Tiny Taco Bites

How can something so small come with such a big punch of taste?! Tiny Taco Bites are the perfect hand-held for your next gathering and there’s nothing miniscule about it! Flavorful, zesty taco-seasoned ground beef with a glorious hint of ranch dressing is topped with cheddar cheese and baked until bubbly in phyllo tart shells. It doesn’t get any easier or more crowd-friendly than Tiny Taco Bites. You just can’t stop eatin’ them!

Ingredients

  • 1 pound ground beef
  • 1 (1-ounce) package taco seasoning
  • 1 (10-ounce) can tomatoes with green chilies, diced
  • 2 cups cheddar cheese, shredded
  • 1 (8-ounce) bottle ranch dressing
  • 5 (15-count) frozen phyllo tart shells, thawed

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line two or three (18×26-inch) baking sheets with parchment paper.

Step 3 –In a large skillet over medium-high heat, add the ground beef and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.

Step 4 –Drain the excess grease.

Step 5 –Add the taco seasoning and the tomatoes with green chilies and their juices to the cooked ground beef and cook, while stirring frequently, until incorporated and the liquid has evaporated, about 5 minutes.

Step 6 –Transfer the taco meat mixture from the stovetop to a wire rack.

Step 7 –Add the cheddar cheese and the ranch dressing to the taco meat mixture and stir to combine.

Step 8 –Arrange the phyllo tart shells onto the prepared baking sheets. With a spoon, add the taco meat mixture to each of the phyllo tart shells, adding enough so each shell is well-filled.

Step 9 –Bake until the cheese melts and the phyllo tart shells are golden-brown, about 8-10 minutes.

Step 10 –Serve.
