Ingredients

  • olive oil, to taste
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 8-12 thick slices pancetta, cut into small squares
  • 4 eggs
  • salt, to taste
  • fresh ground pepper, to taste
  • 2 (16-ounce) packages spaghetti
  • 2 cups parmesan cheese, grated

Directions

Step 1 –Fill a frying pan with 1/2 inch of the olive oil and add the garlic, the onion, and the pancetta.

Step 2 –Let the mixture simmer until all the flavors meld together and the pancetta is cooked through, being careful to never let the oil boil, about 30 minutes.

Step 3 –In a bowl, beat the eggs.

Step 4 –Season the eggs with the salt and the fresh ground pepper.

Step 5 –Bring a pan of salted water to a boil and cook the spaghetti until al dente, according to package directions.

Step 6 –Drain the spaghetti and immediately add the egg mixture to the hot pasta, keeping the pasta and the egg mixture moving as fast as possible. The trick is to use the heat from the pasta to cook the eggs, but to keep it moving so it doesn’t scramble. It will become a rich creamy sauce.
