Trash-Talk Tacos

In the kindest and sincerest way possible, we’d like to let you know that Trash-Talk Tacos really are the best of all the options out there. Don’t be offended; we like yours, too. But these… these are saucy, sweet, and savory. They’re pressure-cooked and just so tasty. Nothing else can ever compare! The truth hurts sometimes, even when it’s delivered with love. So, make yourself feel better with a handful of Trash-Talk Tacos!

Ingredients

For the tacos:

  • 1 1/2 pounds chicken thighs, boneless and skinless
  • 1 (16-ounce) jar mild salsa
  • 3 tablespoons honey
  • 1 1/2 tablespoons canned chipotle peppers in adobo sauce, finely chopped
  • 1 1/2 teaspoons kosher salt, plus more, to taste
  • 1 teaspoon garlic powder
  • 12 (6-inch) corn or flour tortillas, warmed

Optional toppings:

  • sour cream, to taste
  • avocado, to taste, sliced
  • cilantro, to taste

Directions

Step 1 –In a pressure cooker, add the chicken, the salsa, the honey, the chipotle peppers, 1 1/2 teaspoons of the salt, and the garlic powder and use tongs to toss well.

Step 2 –Place the lid on the pressure cooker and lock it in place.

Step 3 –Turn the steam release to the sealing position.

Step 4 –Select the “manual/pressure cook” setting, then “high pressure,” and set for 8 minutes. It will take about 12-14 minutes for the pressure cooker to come to pressure before it starts to cook.

Step 5 –Carefully turn the steam release handle to the venting position, then let the steam fully escape, about 1-2 minutes.

Step 6 –Take the lid off the pressure cooker and transfer the chicken to a bowl, leaving the sauce mixture.

Step 7 –Select the “sauté” setting on the pressure cooker, then the “high temperature” setting.

Step 8 –Bring the sauce mixture to a boil, stirring occasionally, until it thickens, about 15 minutes.

Step 9 –Press “cancel” on the pressure cooker.

Step 10 –While the sauce mixture boils, use two forks to shred the chicken.

Step 11 –Place the shredded chicken in the sauce mixture and stir to coat.

Step 12 –Taste the chicken mixture and season with the extra salt, as needed. Stir to combine.

Step 13 –Serve the chicken in the warm tortillas topped with the sour cream, the avocado, and the cilantro.
