Oooo, but then you experience the crispy crunch of the creamy, homemade coleslaw and that’s when you’ll know you can no longer contain that childlike giggle because they’re just that good. Ingredients
For the tacos:
- 4 chicken breasts, boneless and skinless
- 1 cup Buffalo wing sauce, store-bought or homemade
- 12 flour tortillas, warmed, for serving
- blue cheese, to taste, for garnish
For the celery coleslaw:
- 4 tablespoons sour cream
- 1/2 lime, juiced
- 1 tablespoon milk
- 1/2 teaspoon salt
- 4 celery ribs and leaves, chopped
- 1/2 cup red onion, sliced
- fresh cilantro, to taste, chopped
Directions
Step 1 –In a slow cooker, add the chicken breasts and completely cover them with the Buffalo wing sauce.
Step 2 –Cover the slow cooker and cook the chicken breasts on low heat until they reach an internal temperature of 165 degrees F and can be shredded easily, about 4-5 hours.
Step 3 –In a medium bowl, add the sour cream, the lime juice, the milk, and the salt and whisk together.
Step 4 –Add the celery, the red onion, and the cilantro to the sour cream mixture and toss well.
Step 5 –Refrigerate the coleslaw until ready to serve.
Step 6 –Transfer the cooked chicken breasts to a plate and use two forks to shred them.
Step 7 –Add the shredded chicken to the slow cooker and stir well to coat.
Step 8 –Top the warm tortillas with the shredded chicken and the celery coleslaw.
Step 9 –Serve the tacos garnished with the blue cheese.
