Tacos on a Stick are the dish to make when you want tacos but also want to mingle at a party! The convenient main course stacks everything you’d want on a taco but on a stick–like juicy sirloin steak, sweet and crispy red peppers, green peppers, onions, and bright, juicy tomatoes, all covered in your favorite taco seasoning. Sounds like a flavorful fiesta, right? You can dip them in some spicy salsa con queso or fluffy sour cream to experience even more Tex-Mex goodness. Tacos on a Stick are dripping with flavor and good times!
Ingredients
- 1 (1-ounce) envelope taco seasoning
- 1 cup tomato juice
- 2 tablespoons canola oil
- 2 pounds beef top sirloin steak, cut into 1-inch cubes
- 1 medium green pepper, cut into chunks
- 1 medium sweet red pepper, cut into chunks
- 1 large onion, cut into wedges
- 16 cherry tomatoes
- salsa con queso, optional, to taste
- sour cream, optional, to taste
Directions
Step 1 –In a large shallow bowl, combine the taco seasoning, the tomato juice, and the oil. Mix well.
Step 2 –Reserve 1/2 cup of the tomato juice mixture in the refrigerator for basting.
Step 3 –Add the beef to the remaining tomato juice mixture and turn to coat.
Step 4 –Cover the bowl and refrigerate for at least 5 hours and up to overnight.
Step 5 –Drain and discard the marinade from the beef.
Step 6 –On metal or soaked wooden skewers, alternate threading the marinated beef, the green peppers, the red peppers, the onion, and the tomatoes.
Step 7 –Grill, uncovered, over medium heat for 3 minutes on each side.
Step 8 –Carefully baste the beef-veggie skewers with the reserved marinade.
Step 9 –Continue turning and basting until the meat reaches desired doneness, 145 degrees F for medium, about 8-10 minutes.
Step 10 –Let the beef-veggie skewers stand for 5 minutes.
Step 11 –Serve with the salsa con queso and the sour cream.
