Ingredients

  • 1 1/2 cups water
  • 1/4 cup plus 1 tablespoon butter
  • 1 (6-ounce) package quick-cooking stuffing mix
  • 1 medium onion, diced
  • 3 stalks celery, diced
  • 1 (10.5-ounce) can low-sodium cream of chicken soup
  • 1/2 (10.5-ounce) can low-sodium cream of mushroom soup
  • 1 (8-ounce) container sour cream
  • 1 whole cooked rotisserie chicken, skinned, de-boned, and shredded
  • salt, to taste
  • ground black pepper, to taste

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Spray a 9×13-inch baking dish with cooking spray.

Step 3 –In a saucepan over medium heat, combine the water and the butter and bring to a boil.

Step 4 –Add the stuffing mix to the saucepan and stir to combine.

Step 5 –Transfer the saucepan from the heat, cover, and let it sit until the water is absorbed, about 5 minutes.

Step 6 –In a large skillet over medium heat, melt the remaining butter.

Step 7 –Add the onion and the celery to the butter and cook, stirring frequently, until softened, about 5-10 minutes.

Step 8 –Fluff the stuffing with a fork.

Step 9 –In a large bowl, combine the cream of chicken soup, the cream of mushroom soup, and the sour cream and mix until well combined.

Step 10 –Spread the shredded chicken in an even layer over the bottom of the prepared baking dish.

Step 11 –Spread the onion mixture in an even layer over the chicken and sprinkle it with the salt and the pepper.

Step 12 –Spread the soup mixture in an even layer over the top of the onion mixture.

Step 13 –Sprinkle the stuffing mixture in an even layer over the soup mixture.

Step 14 –Bake the casserole until the filling is bubbly and the topping is golden-brown, about 1 hour.

Step 15 –Serve.
