Ingredients
For the filling:
- 1 pound ground beef
- 1 large onion, chopped
- 2 small cloves garlic, minced or pressed
- 1 (11-ounce) can corn kernels, drained
- 1 (10.75-ounce) can condensed tomato soup, undiluted
- 1 cup water
- 1 tablespoon chili powder
- 1 teaspoon salt
For the cornbread topping:
- 1 (8.5-ounce) box corn muffin mix
- 1 egg
- 1/3 cup milk
Optional garnishes:
- cheddar cheese, grated, to taste
- sour cream, to taste
- parsley, to taste
- cilantro, chopped, to taste
- red onion, chopped, to taste
- green onion, sliced, to taste
Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –Lightly grease a 2-quart baking dish.
Step 3 –In a large skillet over medium-high heat, cook the ground beef and onion until the meat is no longer pink and the onions are translucent, for about 7-10 minutes.
Step 4 –Add the garlic and cook until fragrant, about 30 seconds.
Step 5 –Drain the fat from the skillet.
Step 6 –Stir in the corn, tomato soup, water, chili powder, and salt.
Step 7 –Reduce the heat to low and let the mixture simmer for about 15 minutes.
Step 8 –Transfer the beef mixture to the prepared baking dish.
Step 9 –In a medium bowl, stir together the cornbread mix with the egg and milk.
Step 10 –Spread the batter over the beef mixture.
Step 11 –Bake until golden brown and the topping is cooked through, about 18-20 minutes.
Step 12 –Let stand for 5-10 minutes.
