Vegan Green Bean Casserole

Ingredients

  • 2 teaspoons olive oil
  • 1 (8-ounce) carton mushrooms, sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups dairy-free sour cream
  • browning sauce, optional, to taste
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 (12-ounce) packages frozen cut green beans, thawed
  • 4 cups dairy-free cheddar-flavored cheese, shredded
  • 1/4 cup dairy-free buttery spread, melted
  • 1 cup butter crackers, crushed
  • 1 cup crispy fried onions, coarsely chopped

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 9×13-inch baking dish.

Step 3 –Heat a large skillet over medium heat and add the oil to the skillet.

Step 4 –Add the mushrooms and the onions to the skillet and sauté until they are tender.

Step 5 –Add the garlic to the skillet and cook, stirring frequently, until it is fragrant, about 1 minute.

Step 6 –Add the sour cream, the browning sauce, the salt, and the pepper to the vegetable mixture and stir to combine.

Step 7 –Add the green beans and the cheese to the vegetable mixture and stir to coat.

Step 8 –Transfer the vegetable cheese mixture to the prepared baking dish.
