Warm & Cozy Dip

When the weather is just so ding-dang cold, all you want to do is go inside and eat something warm and cheesy. It’s just a natural instinct, really. So, the next time you find yourself in this situation, whip up some of this Warm & Cozy Dip. It’s ooey, it’s gooey, and it just warms you to the core. Basically, dipping your favorite crackers into this cheesy, citrusy, and tomato-y goodness will cure the chill that was making you chatter. Cold days are made better with Warm & Cozy Dip!

Ingredients

  • 1 tablespoon olive oil
  • 1 cup low-fat ricotta cheese
  • 1 (8-ounce) log goat cheese, sliced
  • 3/4 cup feta cheese, crumbled
  • 1 clove garlic, minced
  • 1/4 teaspoon kosher salt
  • 1 teaspoon lemon juice
  • 1/4 cup fresh basil, chopped
  • 1/4 pound yellow cherry tomatoes, divided
  • 1/4 pound red cherry tomatoes, divided
  • crackers, to taste, for dipping

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 6-inch baking dish with nonstick spray.

Step 3 –In a large bowl, add the olive oil, the ricotta, the goat cheese, the feta, the garlic, the salt, the lemon juice, and the basil and mix with a spoon to combine.

Step 4 –Add 1/2 of the yellow cherry tomatoes and 1/2 of the red cherry tomatoes to the cheese mixture and use your hands to combine.

Step 5 –Pour the cheese mixture into the prepared baking dish and top with the remaining yellow tomatoes and the remaining red tomatoes.

Step 6 –Bake the dip until it is bubbly and slightly browned, about 30-40 minutes.

Step 7 –Serve the dip with the crackers.
