Weekend Brown Sugar Pancakes

We love them so much that we started the tradition of making Weekend Brown Sugar Pancakes every Saturday morning! It’s the best way to kick off the fun and they’re delicious, too, which is a huge bonus. Kick off your shoes and leave the worries of the week behind, it’s time to chill!

Ingredients

  • 1/2 cup plus 2 tablespoons quick-cooking oats
  • 1/2 cup whole-wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup brown sugar, packed
  • 1 large egg, room temperature
  • 2 tablespoons vegetable oil
  • 1 cup buttermilk

Directions

Step 1 –Grease and warm a large cast-iron skillet or griddle over medium heat.

Step 2 –In a small bowl, combine the oats, the wheat flour, the all-purpose flour, the baking soda, the salt, and the sugar.

Step 3 –In a medium bowl, combine the egg, the oil, and the buttermilk and beat.

Step 4 –Stir the egg mixture into the flour mixture until it is just moistened.

Step 5 –Pour the batter in 1/3-cupfuls onto the prepared cast-iron skillet or griddle.

Step 6 –Turn the pancakes once bubbles form on top and cook until the second side is golden-brown.

Step 7 –Serve.
