Sure, the beef is moist and tender and everything you want in a meat foundation, but the sugary, crusty sauce melded on top truly is the superstar. Ingredients
- 1/2 cup brown sugar, packed
- 1/2 cup ketchup
- 1 1/2 pounds lean ground beef
- 2 large eggs
- 1 small onion, chopped
- 3/4 cup milk
- 3/4 cup saltine crackers, finely crushed
- 1 1/2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon ground ginger
- mashed potatoes, optional, to taste, cooked and warm
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Lightly grease a 5×9-inch loaf pan.
Step 3 –Press the brown sugar into the bottom of the prepared loaf pan and spread the ketchup over the top.
Step 4 –In a large bowl, combine the beef, the eggs, the onion, the milk, the crackers, the salt, the pepper, and the ginger and shape it into a loaf.
Step 5 –Place the loaf on top of the ketchup layer.
Step 6 –Bake the meatloaf until the juices are clear, about 1 hour.
Step 7 –Serve with the mashed potatoes.
