Weeknight Beef Nachos

You find dishes like Weeknight Beef Nachos that taste oh, so good, but don’t take you very much time at all. And did we mention amazingly delicious? Yeah, that’s Weeknight Beef Nachos for sure. Your favorite crispy, salty tortilla chips will be piled high with juicy and hearty beef, smooth and creamy refried beans, lots of melty, savory cheese, and all your favorite nacho toppings. So easy, so delicious, and fit for a crowd, too! Dinner time stress?! That’s “nacho” problem no more!

Ingredients

For the nachos:

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 (16-ounce) can refried beans
  • 1 (16-ounce) jar salsa
  • 1 (6-ounce) can pitted ripe olives, chopped
  • 1/2 cup cheddar cheese, shredded
  • 1 green onion, chopped
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • tortilla chips, to taste

Optional toppings:

  • ripe olives, to taste, sliced
  • green onions, to taste, chopped
  • tomatoes, to taste, diced

Directions

Step 1 –In a large skillet over medium heat, cook the beef and the onion, while breaking up the meat, until the beef is no longer pink, about 5-7 minutes. Drain the excess grease.

Step 2 –Stir the beans, the salsa, 1 can of the olives, the cheese, 1 of the green onions, the chili powder, and the salt into the beef mixture and cook until it is heated through, about 5-7 minutes.

Step 3 –Serve the beef mixture over the tortilla chips topped with the remaining olives, the remaining onions, and the tomatoes.
