You’re-Such-A-Cranberry Delight

If you’re feeling a little down in the dumps, stop the self-pity, because you’re so much better than that. In fact, You’re-Such-A-Cranberry-Delight! Don’t take that slightly strange compliment lightly. Just like this fluffy, fruity, cranberry-infused, cleverly titled treat, you are loved by many and always put a smile on their faces. So, the next time you’re feeling a little bit sad, remember You’re-Such-A-Cranberry-Delight and all your problems will dwindle away with each spoonful!

Ingredients

  • 4 cups frozen cranberries, plus more, to taste, for garnish
  • 1 1/2 cups sugar
  • 3/4 cup water
  • 1 (.25-ounce) envelope unflavored gelatin
  • 1/4 cup lemon juice
  • 2 tablespoons orange juice
  • 1 1/2 cups heavy whipping cream
  • 3 tablespoons confectioners’ sugar
  • 1 teaspoon vanilla extract

Directions

Step 1 –In a saucepan, add 4 cups the cranberries, the sugar, and the water and bring to a boil.

Step 2 –Reduce the heat to a simmer and cook the cranberries until they burst.

Step 3 –Strain the cooked cranberries through a food mill or sieve into a large bowl.

Step 4 –Stir the gelatin, the lemon juice, and the orange juice into the cranberries.

Step 5 –Let the cranberry mixture cool and thicken, until it coats the back of a spoon.

Step 6 –In a small bowl, add the heavy whipping cream and beat with an electric hand mixer until soft peaks form.

Step 7 –Add the confectioners’ sugar and the vanilla to the whipped cream and beat until stiff peaks form.

Step 8 –Fold the whipped cream into the cranberry mixture.

Step 9 –Place the bowl in the refrigerator and let the cranberry mixture chill until it is set.

Step 10 –Serve the cranberry mixture garnished with the extra cranberries.
